Matias Kelm, Pastry Chef of the 1-Michelin-starred restaurant La Speranzina, will teach you how to create delicious and healthy dishes, with a focus on reducing the use and consumption of added sugars, saturated fats and other unhealthy ingredients.
On the strength of his 10 years of experience in starred restaurants, he has learnt to analyse raw materials with different eyes, understanding how to use them to create desserts suitable for all kinds of needs: coeliac disease, lactose intolerance, diets or special pathologies.

Biscuits: Viennese with honey and corn (without yeast/sugar sugar)
